Planting in the vegetable garden in August? Yes, yes, it’s possible!

The further the season progresses, the more abundant your harvests become. However, there comes a time when some spaces in the vegetable garden are left empty, as the earlier vegetables and herbs have already finished their production. What does a gardener do who doesn’t want to see their vegetable garden take on an autumnal look just yet? They plant and sow again with fast-growing varieties that are, of course, not afraid of cooler temperatures!
August is an excellent time for planting in the garden. The days are still warm and sunny, the nights are cooler, and water is available to nourish the roots. Did you know that cooler temperatures make the foliage more colorful and crunchy? It is even said that they give carrots a sweeter taste.
Leafy Vegetables
Lettuces, mesclun, arugula, lamb's lettuce, and others, as well as spinach and Swiss chard, can all find their place in the vegetable garden in August. Some are not afraid of more intense cold, like spinach, for example. You can sow successively to have harvests until October.

Root Vegetables
Carrots, beets, and turnips, like radishes, can be planted in the vegetable garden about 8 weeks before the first frosts in your area. By planting them in August, you will have good ripe vegetables in October. Don't worry about the announcement of the first frosts, these vegetables are not too sensitive to cold. It is not necessary to cover them.

Cabbages
All cabbages: head cabbage, curly kale, Brussels sprouts, cauliflower, radicchio, and kohlrabi are to be planted in the vegetable garden at the end of the season. Cooler temperatures enhance the flavor of cabbages; therefore, don’t be in a hurry to harvest them, they are not afraid of the cold.

And the Others!
Broccoli grows very well in the fall, as do peas. By leaving the base of the celery plant in place during the first harvest, you will have a second growth, less significant but just as interesting. You can also sow cilantro again.
