Preserve the garden harvest: 3 methods to enjoy it longer

The end of summer rhymes with abundance in the vegetable garden! Ripe tomatoes, crunchy cucumbers, fragrant herbs, generous beans... it's hard to eat everything before it spoils. Rather than seeing some of your efforts go to waste, why not extend the pleasure of your harvests into the heart of winter?

Here are three simple and accessible methods to preserve your vegetables and herbs for as long as possible.

1. Freezing

This is probably the quickest and most versatile method, perfect for busy gardeners.

  • Wash and cut your vegetables into pieces.
  • For most vegetables (beans, zucchini, peppers, corn), a quick blanching in boiling water followed by an ice water bath helps preserve color, texture, and nutrients before freezing.
  • Herbs like basil freeze well when chopped and mixed with a little olive oil in ice cube trays: a ready-to-use portion for your future recipes!
  • Use airtight bags or containers, and don't forget to label with the date: your vegetables will keep for 8 to 12 months in the freezer.

2. Canning (sterilization)

A traditional method, perfect for tomatoes, pickles, and jams, which allows you to preserve your harvests at room temperature for several months, or even years.

  • Use jars and lids designed for canning, in good condition.
  • Fill the jars with your vegetables or preparations (tomato sauce, homemade ketchup, cucumber pickles), then sterilize them in a boiling water bath according to the time recommended for your recipe.
  • Always check that the lid has sealed properly (it should not depress in the center) before storing your jars in a cool, dark place.
  • It's a great way to turn an excess of tomatoes into homemade sauce that will accompany you all fall and winter!

3. Drying

Ideal for herbs, but also for some vegetables like cherry tomatoes or peppers, drying allows you to concentrate flavors while taking up very little storage space.

  • For herbs (basil, thyme, oregano, parsley): hang small tied bouquets in a dry, dark, and well-ventilated place, or use a dehydrator to speed up the process.
  • Once completely dried, crumble the leaves and store them in an airtight jar, away from light.
  • For vegetables, an electric dehydrator gives the best results and allows you to make delicious dried tomatoes or homemade vegetable chips.
