There it is: your tomato plants have decided to give it their all at the same time! Between the ripe red ones, the cherries overflowing from the basket, and those we forgot to pick in time, it's hard to keep up. Good news: a surplus of tomatoes is a great opportunity to be creative in the kitchen rather than a problem to manage.

Here are 5 delicious ways to transform your harvest, whether it's modest or abundant.

1. Homemade tomato sauce

The essential classic! Simmer your tomatoes with onion, garlic, and some garden herbs (basil, oregano) to get a sauce rich in flavor. Frozen in individual portions, it will become your best ally for an impromptu weeknight dinner all winter long.

2. Oven-roasted tomatoes

Halved, drizzled with olive oil, and sprinkled with garlic and herbs, tomatoes slowly roasted in the oven develop a concentrated and slightly caramelized flavor. Delicious on pasta, in a salad, or simply on a slice of toasted bread.

3. Homemade fresh salsa
